An Unforgettable Dairy Farm Adventure in Minnesota
My summer adventures kicked off recently with a truly memorable trip to a picturesque dairy farm in Minnesota, an incredible experience facilitated by my wonderful friends at Land O’Lakes. They extended an invitation to meet one of their dedicated co-op farm families: Sadie and Glen, along with their sweet children, who passionately operate Blue Diamond Dairy. Nestled amidst the verdant landscapes of Minnesota, this farm offered a firsthand look into the heart of American dairy farming. It was more than just a visit; it was an immersion into a lifestyle built on hard work, dedication, and a deep love for the land and its animals.
Sadie and Glen are not just farmers; they are the backbone of their community, raising their children on a working farm while pursuing their profound passion for agriculture. Sadie also shares her insights as a fellow blogger, bridging the gap between farm life and the wider world. Both Glen and Sadie commit countless hours, day in and day out, to nurture their farm, support their family, and instill strong values in their children. Their commitment is a testament to the enduring spirit of family farming and the meticulous care that goes into producing the dairy products we all enjoy.

During our visit, Glen and Sadie generously shared their expertise, teaching us the intricate art of milking cows, both by hand and using modern milking pumps. This hands-on lesson offered invaluable insight into the daily rhythms of a dairy farm. After mastering the basics (or attempting to!), we even held a friendly hand-milking competition. As you might expect, Ree from The Pioneer Woman, with her innate connection to farm life, absolutely outshone us all. I, however, held my own and managed a respectable showing, a personal victory in itself!

Our tour continued with a trip to the expansive pastures of Blue Diamond Dairy, where the cows enjoy their days during Minnesota’s warmer months. It was here that we met Helen, a truly remarkable and incredibly friendly cow who instantly became the star of our visit. Helen, with her gentle demeanor, approached us with curiosity, allowing us to get up close and personal. Her affectionate nature was evident, making a lasting impression on everyone present. It’s moments like these that truly highlight the bond between farmers and their animals, and the serene beauty of agricultural life.

Helen, it turns out, is quite the affectionate kisser! Her gentle nuzzles were a delightful surprise. Jessica of The Novice Chef captured an absolutely amazing photograph of Helen giving Maria’s baby a sweet smooch, a moment that perfectly encapsulated the warmth and charm of our farm visit.

Sadie and Glen were truly exceptional hosts, demonstrating such remarkable graciousness and hospitality throughout our marvelous day at Blue Diamond Dairy. Pink Lemonade Cupcakes

Ingredients
For the Pink Lemonade Cupcakes:
- 3/4 cup Land O Lakes® Salted Butter, softened (3 Half Sticks)
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 1/2 teaspoons baking powder
- 4 Meyer lemons (2 heaping tablespoons zest + 1/2 cup juice)
- 2 1/2 cups all-purpose flour
- 3/4 cup whole milk
- 3 to 5 drops red food coloring
For the Pink Lemonade Frosting:
- 1 1/2 cups Land O Lakes® Salted Butter, softened (6 Half Sticks)
- 8 ounces cream cheese, softened
- 6-8 cups powdered sugar
- 1 Meyer lemon (zest + 3 tablespoons juice)
- 2 -3 drops red food coloring
- Pink Sprinkles
- 24 lemon jelly candy wedges
Instructions
- Preheat the oven to 350 degrees F (175°C). Line two large muffin pans with 24 paper liners. Place 3 softened Land O Lakes® Salted Butter Half Sticks in the bowl of an electric mixer. Add the sugar and beat until light and fluffy, about 3 to 4 minutes. Scrape down the sides of the bowl, then add the eggs, vanilla extract, and baking powder. Beat again until thoroughly combined.
- Add the lemon zest and fresh lemon juice to the bowl. Turn the mixer to low speed and slowly incorporate the all-purpose flour and whole milk until just combined. Scrape the bowl once more, then, with the mixer on low, add 3 to 5 drops of red food coloring to achieve a delicate pale pink color. Mix until evenly colored.
- Divide the batter evenly among the 24 cupcake liners. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the muffin pans for 10 minutes before transferring them to a wire cooling rack to cool completely.
- Once the cupcakes are entirely cool, prepare the frosting. Place the softened butter and cream cheese in a clean mixing bowl. Cream these ingredients with the electric mixer on high speed until the mixture is exceptionally smooth, with absolutely no clumps. Scrape down the sides of the bowl, then add the lemon zest and fresh lemon juice. Turn the mixer to low and gradually add the powdered sugar until your desired frosting consistency is achieved. Finally, add 2 to 3 drops of red food coloring to create a beautiful pale pink hue.
- Transfer the prepared frosting to a large piping bag fitted with a wide piping tip. Pipe generous mounds of frosting onto the top of each cooled cupcake.
