Instructions

  1. Cook the Pasta: Set a large pot of water over high heat and bring it to a rolling boil. Add a generous pinch of salt to the water. Once boiling, add your chosen pasta and stir well. Cook the pasta according to the package instructions until it reaches an al dente texture. Before draining, carefully scoop out and reserve 2 cups of the starchy pasta water for later use. Drain the pasta and set it aside.
  2. Sear the Chicken: While the pasta cooks, place a large cast-iron skillet (or a heavy-bottomed sauté pan) over medium heat. Add the butter and olive oil.
