As a long-time fan, and with Rice Krispies being my husband’s absolute favorite cereal, I eagerly embraced the chance to get creative and contribute to this sweet competition. Our inaugural challenge revolved entirely around Easter – a season brimming with vibrant colors, fresh beginnings, and delightful symbols of renewal. The process of developing our signature treat was a labor of love, filled with much delightful “research” and taste-testing. We meticulously experimented with various Rice Krispies recipes, sampling and refining our creations until we struck the perfect balance. Our goal was to devise something that was not only incredibly easy to make, but also undeniably delicious and charmingly cute. It was undoubtedly challenging work, but someone had to take on the delicious responsibility, and we wholeheartedly embraced it! We spent hours brainstorming flavor profiles, debating design aesthetics, and ensuring that our final product would evoke smiles and happy memories. However, this charming vegetable patch was, perhaps inconveniently, situated right beside a bustling burrow of mischievous, bouncing bunnies, also made from our cereal creations. What unfortunate luck for our Krispie-garden veggies! This playful narrative added a storytelling element to our presentation, making the entire display not just a feast for the taste buds, but also a delight for the eyes and the imagination. We wanted to create a scene that would instantly transport observers into a joyful spring landscape, where every element, from the vibrant colors to the adorable characters, contributes to a feeling of lighthearted celebration and the magic of the season.

While my own children didn’t get to join in the creation of these specific treats on that particular day, this recipe is absolutely ideal for a fun-filled Easter project with little ones. - 8 ounces yellow candy melts, thoroughly melted and kept warm for dipping
- 14 ounces sweetened flaked coconut, for coating
- 1 cup chocolate chips, melted, for piping eye details
- 4 ounces orange candy melts, melted, for piping beak details
For the Crispy Cocoa Krispies Nests:
- 4 sticks (1 pound) unsalted butter, softened to room temperature for easy creaming
- 1 1/3 cups granulated sugar
- 1 3/4 teaspoons pure vanilla extract
- 3/4 teaspoon fine sea salt
- 1 teaspoon baking powder
- 3 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder, sifted to remove lumps
- 1 1/2 cups shredded coconut
- 1 1/2 cups Kellogg’s Rice Krispies® cereal
- 1 1/2 cups Kellogg’s Cocoa Krispies® cereal
- A pinch of flaky sea salt for sprinkling (optional, but highly recommended for flavor enhancement)
Instructions
Crafting the Lemon Rice Krispies Treats:
- In a large, heavy-bottomed saucepan, melt the butter slowly over low heat. It’s important to keep the heat low to prevent burning. Once the butter is completely melted, add the miniature marshmallows and stir continuously with a heat-resistant spatula until they are entirely melted and form a smooth, gooey consistency. Remove the saucepan from the heat immediately after the marshmallows are melted.
- Gently fold the white chocolate chips and the aromatic, freshly grated lemon zest into the warm marshmallow mixture. Continue to stir until the white chocolate is fully incorporated and melted, creating a creamy, bright, and zesty base. The lemon zest adds a wonderful freshness that cuts through the sweetness.
- Add the 6 cups of Rice Krispies® cereal to the mixture in the saucepan. Stir diligently and quickly until all the cereal is thoroughly coated with the lemon-marshmallow goodness. Work efficiently as the mixture will start to set.
- Prepare a 13×9-inch baking pan or a large cookie sheet by lightly spraying it generously with non-stick cooking spray. Also, lightly spray your spatula to prevent the sticky mixture from adhering to it. Pour the Lemonade Rice Krispies® mixture into the prepared pan and use the sprayed spatula to evenly spread it out and press it gently into the pan. Allow it to cool completely and set firm before proceeding to shape the chicks. This step is crucial for firm, easy-to-handle treats that hold their shape.
Assembling the Cheerful Chicks:
- Once the Lemonade Rice Krispies® Treats are cool and firm, use approximately 1 tablespoon of the mixture to form an egg shape, resembling a small chick’s body. Gently press and mold with your hands, ensuring the shape is smooth and compact.
- Carefully dip each chick-shaped treat into the melted yellow candy melts, ensuring it’s fully coated. Lift it and gently tap to let any excess candy melt drip off. Immediately roll the coated chick in the sweetened flaked coconut until it’s beautifully and evenly covered. The coconut will give them a wonderful texture and a fluffy, feathery appearance. Place each finished chick onto a large piece of parchment paper to dry and set completely.
- To add charming facial features, pipe small dots for eyes onto each chick using the melted chocolate chips. A piping bag with a very small round tip or a simple zip-top bag with a tiny corner snipped off works well. Alternatively, for a simpler method, dip a toothpick into the melted chocolate and carefully dot it onto the chick. Next, pipe a small, triangular nose or beak onto each chick using the melted orange candy melts. Allow the chicks to dry completely on the parchment paper; this will help their delicate features set firmly and prevent smudging.
Baking the Crunchy Cocoa Nests:
- Preheat your oven to 350 degrees F (175 degrees C). In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and vanilla extract using an electric mixer on medium speed until the mixture is light, fluffy, and pale in color. This usually takes about 2-3 minutes of continuous mixing.
- In a separate medium bowl, whisk together the dry ingredients: fine sea salt, baking powder, all-purpose flour, and unsweetened cocoa powder. Sifting the cocoa powder is recommended to avoid lumps and ensure a smooth dough. Ensure they are well combined.
- With the electric mixer on low speed, slowly add the dry flour and cocoa mixture to the butter mixture, mixing only until just combined and a cohesive dough forms. Be careful not to overmix, as this can lead to tough cookies. Finally, fold in the shredded coconut by hand until it is evenly distributed throughout the rich chocolate dough.
- Line your baking sheets with parchment paper for easy removal and cleanup. In a shallow pie pan or a wide, low bowl, gently mix the Rice Krispies® cereal and the Cocoa Krispies® cereal together. This will be your “nest” coating, providing that irresistible crunch.
- Roll the prepared cookie dough into uniform 3-tablespoon sized balls. For best results and even baking, ensure they are as close in size as possible.
- Roll each dough ball thoroughly in the mixed Rice Krispies and Cocoa Krispies, pressing firmly on all sides to ensure the cereal completely covers each ball. This creates the signature crunchy texture and a rustic, nest-like appearance that will make your treats truly stand out.
- Arrange the coated dough balls on the prepared baking sheets, leaving about 2 inches of space between each to allow for spreading during baking. Using your thumb, gently but firmly press a deep indentation into the center of each dough ball, effectively creating a nest-like hollow while keeping the sides high. This is where your adorable chick will eventually sit.
- Bake for 17-19 minutes, or until the edges are lightly set and the centers are still slightly soft to the touch. Baking times may vary depending on your oven, so keep a close eye on them.
- As soon as the cookies come out of the oven, while they are still warm, sprinkle them with a scant amount of flaky sea salt. This subtle addition enhances the chocolate flavor beautifully and adds a delicate sparkle. Allow the cookies to cool on the baking sheet for several minutes before carefully transferring them to a wire rack to cool completely. This prevents them from breaking.
- Once both the chicks and nests are completely cool, delicately place one Lemonade Rice Krispies® Chick into the hollow of each Cocoa Krispies Nest just before serving. This ensures they look their absolute best for presentation and adds to the element of delightful surprise.
